ABOUT THIS WINE
Les Polissons Malbec is a 2021 vintage red wine from SAS Benoit Aymard, produced in the Cahors appellation of Southwest France. The wine's name, meaning 'the rascals,' signifies its playful and fruit-forward character, created by winemaker Benoit Aymard as a joyful expression for shared moments. Aymard, a third-generation winemaker, took over the family estate in 2014 and focuses on expressing the terroir and fruit of Malbec in a modern, approachable style. This wine represents a contemporary interpretation of Malbec from its traditional home, emphasizing drinkability and pleasure. The estate is small, with 6 hectares of vines, and the winemaker is in the process of obtaining organic certification for his vineyards. The 2021 vintage benefited from stable weather and ideal growing conditions.

WINE MAKING PROCESS
The Les Polissons Malbec is produced from hand-harvested 30-year-old Malbec vines. The fruit undergoes fermentation using native yeasts, a low-intervention technique that allows for the expression of the grape's natural character. Following fermentation, the wine is aged entirely in stainless steel tanks. This method is chosen to preserve the bright fruit profile and freshness of the Malbec, without the influence of oak aging. The producer, SAS Benoit Aymard, practices organic viticulture and is in the process of obtaining official certification for his vineyards.
