WINE MAKING PROCESS
The winemaking process for Les Sentius begins with a cold pre-fermentative maceration for three days at 10°C, followed by alcoholic fermentation in fiber tanks with temperatures controlled up to 28°C. Total maceration lasts for 20 days. Malolactic fermentation is carried out in vats or barrels. The wine then undergoes aging for 15 months in French oak barrels, with a specific composition of 50% first-year, 40% second-year, and 10% new oak. Manual harvesting is employed to ensure fruit quality.
