WINE MAKING PROCESS
The winemaking process for Proprietà Sperino Lessona begins with de-stemming and gentle pressing of the grapes. Fermentation is carried out using indigenous yeasts in open oak fermenters or tanks, with a maceration period of 22-26 days involving regular punch-downs. Following fermentation, the wine is aged for approximately 30-34 months in oak barrels and botti of various sizes. Further bottle aging precedes release. Viticultural practices focus on traditional methods with minimal use of chemical treatments, and grapes are hand-harvested and hand-sorted.
