WINE MAKING PROCESS
Let it Flow 2023 is produced using Grenache Noir and Carignan grapes. The vinification involves a 14-day maceration period, with a portion of the grapes undergoing partial carbonic maceration and 35% of the grapes fermented with stems. Fermentation is spontaneous, utilizing native yeasts. Gentle pumping over is employed during maceration to manage tannin extraction. Following fermentation, the wine is aged for seven months in steel tanks. The wine is bottled with a total sulfur content of 27 mg/L and is not fined or filtered.
