ABOUT THIS WINE
Licos 2021 is a single-varietal White Grenache wine produced by Clos Pachem, a winery established in 2015 in Gratallops, Priorat. The grapes are sourced from Gandesa in the DO Terra Alta region, cultivated using organic farming practices. The winery's philosophy centers on minimal intervention to reflect the specific terroir. The 2021 vintage experienced varied weather conditions, including a dry spring, wet June, and a warm summer with a heatwave, leading to an intermittent harvest in early September.

WINE MAKING PROCESS
Licos 2021 is produced from 100% White Grenache grapes grown on clay-limestone vineyards in Gandesa, DO Terra Alta. The grapes are cultivated using organic farming methods. Following harvest, grapes from different estates are vinified separately in stainless steel tanks under controlled temperatures. Alcoholic fermentation is also conducted at controlled temperatures, and malolactic fermentation is deliberately avoided. The final blend is determined after fermentation to achieve a fresh and balanced wine. The wine is subsequently aged for 4 to 8 months in stainless steel tanks.
