WINE MAKING PROCESS
The winemaking process for the Dourakis Lihnos Vidiano begins with hand-harvested Vidiano grapes, collected in September. Fermentation takes place over 10 days. Following fermentation, the wine undergoes a six-month aging period. This includes aging on its lees (sur lie) and potentially in oak barrels, a technique that contributes to the wine's texture and complexity. The winery practices organic and sustainable viticulture, reflecting a commitment to environmental stewardship and the preservation of Cretan viticultural heritage.
