WINE MAKING PROCESS
The grapes are hand-harvested and undergo skin fermentation (maceration) for several days to extract color, light tannins, and complex aromatics. Fermentation occurs spontaneously with wild yeasts in stainless steel tanks under temperature control. The wine is aged on its fine lees, bottled unfined and unfiltered with minimal sulfur additions to preserve its natural energy.
