WINE MAKING PROCESS
The 'Lion's Tooth of McLaren Vale Shiraz Riesling' 2022 is produced using a co-fermentation process where Shiraz whole bunches are fermented on Riesling skins for 11 days. The fermentation is managed with hand-plunging twice daily and then completed in French oak barriques. Following fermentation, the wine undergoes maturation for 16 months in a mix of new and older French oak barriques. The winemaking philosophy emphasizes minimal intervention, with the wine bottled without filtration or fining.
