ABOUT THIS WINE
Cantalapiedra Viticultores, led by Isaac Cantalapiedra and his son Manuel, is a pioneering estate in La Seca (Valladolid), the heartland of Verdejo. Operating outside the strict constraints of the Rueda DO, they champion organic and biodynamic farming to rescue Verdejo's true, unmanipulated character. Lirondo is their vibrant, zero-sulfite-added white wine, showcasing the raw energy of the grape. Grown on stony, limestone-rich soils at high altitudes, this wine represents a return to ancestral, honest grape growing in a region often dominated by industrial production.

WINE MAKING PROCESS
Lirondo is crafted from 100% Verdejo grapes harvested by hand from organically farmed vineyards. In the cellar, the grapes undergo spontaneous fermentation using native yeasts in stainless steel tanks. The wine is aged on its fine lees for several months to build texture and complexity. Crucially, it is bottled unfined, unfiltered, and with absolutely no added sulfur dioxide (SO2), preserving its cloudy, living, and energetic profile.
