ABOUT THIS WINE
Lirondo is a 100% Verdejo from Castilla y León, Spain, produced by Cantalapiedra Viticultores. The family-run estate, with roots dating back to the 19th century, focuses on minimal intervention winemaking to express the pure character of the Verdejo grape and its terroir. They operate under the Vino de la Tierra de Castilla y León appellation to maintain their low-intervention approach. The grapes are sourced from organically and biodynamically farmed vines, aged 12-35 years, located in La Seca at an elevation of 750 meters on sandy clay soils with pebbles. This wine is a natural expression, bottled without fining, filtration, or the addition of sulfur, showcasing a traditional style of Verdejo.

WINE MAKING PROCESS
Lirondo is crafted using a minimal intervention approach. Grapes are hand-harvested and undergo a 12-hour maceration on skins before a gentle pressing. Fermentation is carried out with native yeasts in stainless steel tanks, followed by malolactic conversion. The wine is then aged on its fine lees in stainless steel for 6 to 8 months. It is bottled without fining, filtration, or the addition of sulfur, embodying a natural winemaking style.
