WINE MAKING PROCESS
The winemaking process for Los Gals Blanc begins with a 24-hour cold maceration. Following this, fermentation takes place at low temperatures. The wine is then aged on its lees in French oak barrels for four months, with regular stirring (bâtonnage) to enhance texture and complexity. A key aspect of the production is the absence of added sulfites. The grapes are harvested manually, and the estate employs various organic viticulture practices, including cover cropping, plowing, and short pruning.
