WINE MAKING PROCESS
The Lotima Ivory 2021 was produced using a low-intervention method. Solaris grapes were destemmed, crushed, and underwent a 6-hour skin maceration in an oxygen-free environment before pressing. The wine was then fermented slowly and coolly in new Seguin Moreau barriques for two weeks. Post-fermentation, it was aged on fine lees for 11 months with regular battonage, followed by an additional nine months in oak barrels. Bottling occurred in June 2023.
