The production of Lotima Solaris Lottenlund Estate 2021 begins with destemming and crushing the Solaris grapes, followed by an 8-hour skin contact period to extract aromas, depth, and color. Only the self-run juice was used, settled for 48 hours before fermentation with neutral yeast. The wine was then aged for 20 months in stainless steel tanks, including 10 months sur lie with regular batonnage. The estate prioritizes sustainable viticulture, using PIWI grape varieties and avoiding pesticides.
