WINE MAKING PROCESS
The production of Lunar Apogée Tavel involves several key techniques. Grapes are harvested at night to minimize oxidation. A maceration period of 24 to 36 hours on the skins is employed. Fermentation occurs at 21°C using indigenous yeasts. Following fermentation, the wine is aged on fine lees.
