WINE MAKING PROCESS
The winemaking process for Château Ponzac's 'Maintenant ou Jamais' involves rigorous vineyard work, including yield management and leaf thinning. Harvest is mechanical. Fermentation takes place separately for each terroir over 12 to 15 days at 22°C to maintain fruit freshness and crunchiness. Following fermentation, the wine is aged in steel tanks for 8 to 10 months, with no oak influence. The estate has been certified organic since 2021.
