WINE MAKING PROCESS
The Malagouzia Single Vineyard Chelones undergoes a meticulous winemaking process. Grapes are hand-harvested and optically sorted before a pre-fermentation cold soak with skin contact. Alcoholic fermentation occurs in temperature-controlled stainless steel tanks. Following fermentation, the wine is aged for two months on its fine lees with regular stirring ('sur lies' and 'bâtonnage) to enhance texture and complexity. The estate employs sustainable viticultural practices and innovative techniques like optical sorting and gravity-fed winery design.
