WINE MAKING PROCESS
The Mami Emilia Bianco IGT 2020 is produced using Malvasia di Candia Aromatica grapes. The winemaking process involves soft pressing and fermentation at controlled temperatures. A portion of the wine is aged in second and third passage French oak barriques for about 12 months, while the rest is aged in steel tanks. The wines are then blended before bottling. Some production methods may include long maceration in contact with the skins at controlled temperatures. A portion of the grapes is harvested late to increase sugar and aromatic concentration.
