WINE MAKING PROCESS
The winemaking process for Mandrarossa Grillo Costadune begins with cryomaceration at 5-8°C for 4-6 hours. This is followed by fermentation in steel tanks at controlled temperatures of 16-18°C for 15-25 days. The wine then undergoes maturation for 4 months in steel vats, with a further 3 months of bottle aging. Harvest for the Grillo grapes typically occurs in early to mid-August or early September.
