Lustau Manzanilla de Sanlúcar En Rama is produced from Palomino Fino grapes grown in the Jerez-Xérès-Sherry DO, with aging specifically occurring in Sanlúcar de Barrameda. After initial fermentation of the must in stainless steel tanks, the wine is fortified. It then undergoes a minimum of two years of biological aging under a veil of flor yeast in oak barrels.
