WINE MAKING PROCESS
The winemaking process for Marchese di Villamarina begins with prompt transport of harvested grapes for selection and crushing. A pre-fermentation cold maceration of 24 hours is followed by fermentation in stainless steel vats for two weeks, then transferred to large oak barrels. Extended fermentation on the skins is utilized to enhance depth and complexity. Malolactic fermentation is completed by autumn. The wine is then aged for 18 months in French oak barriques, with 50% being new and 50% second use. This is followed by 12 months in traditional large casks or larger capacity barrels, and a minimum of 18 months of bottle aging before release.
