WINE MAKING PROCESS
The winemaking process for Marcillac Le Cros Domaine du Cros begins with hand-harvested grapes. Fermentation occurs in thermoregulated stainless steel vats, with maceration typically lasting 20-25 days for AOC wines. Pumping over the cap is employed during the initial days of maceration. Following fermentation, some wines undergo aging for approximately 6 months in large oak and chestnut barrels. Other cuvées may be aged entirely in tank, with no oak influence. Domaine du Cros utilizes sustainable viticulture in its vineyard management.
