WINE MAKING PROCESS
Maria Casanovas Brut de Brut Nature is produced using the traditional method, also known as Méthode Traditionnelle or Champenoise. The base wine undergoes a second fermentation in the bottle, creating its characteristic fine bubbles. Following this, the Cava is aged on its lees for a minimum of 12 months, and up to 14 months, a process that contributes to its complex aromas and flavors. The winery emphasizes organic viticulture for its estate vineyards and supplements its own production with base wines from other certified organic sources. They are noted for their innovation in blending traditional Penedès grapes with international varietals like Pinot Noir and Chardonnay.
