WINE MAKING PROCESS
The Maria Casanovas XP Gran Reserva is produced using the traditional method, involving a second fermentation in the bottle. Primary fermentation takes place at cool temperatures (12-14°C). Following this, the Cava undergoes an extended aging period of at least 30 months, with the 2020 vintage aged for 36 months. This prolonged contact with the lees contributes to the wine's complexity and fine mousse. The grapes are sourced from the winery's vineyards, which are managed using organic and biodynamic farming practices. The winery is also noted for its innovation, including being an early adopter of Pinot Noir in Cava production.
