ABOUT THIS WINE
Luís Pato, widely known as the 'King of Bairrada,' is a pioneer of modern Portuguese winemaking. A chemical engineer by training, Pato took over his family estate in 1980 and introduced revolutionary techniques to the region. In 1999, he famously chose to exit the Bairrada DOC regulation framework to maintain absolute creative freedom and focus on native Portuguese grapes, labeling his wines under the Regional Beiras designation. This wine showcases the Maria Gomes grape (also known as Fernão Pires), grown in the sandy soils of Bairrada near the Atlantic Ocean, which impart a distinct saline freshness.

WINE MAKING PROCESS
The grapes for this wine are grown in sandy soils and harvested using a unique dual-harvesting strategy. The first harvest occurs in mid-to-late August to secure high-acidity grapes for sparkling wines, while the second harvest takes place two weeks later to capture fully ripe, aromatic grapes for this still white wine. The grapes are fully destemmed and directly pressed before undergoing temperature-controlled fermentation in stainless steel vats. To preserve the vibrant primary fruit and floral characteristics, the wine is aged entirely in stainless steel and bottled young without any oak contact.
