WINE MAKING PROCESS
The grapes, primarily Grillo and Catarratto, are hand-harvested in early September. After pressing, extraction occurs with the skins, and fermentation is conducted at controlled temperatures. The wine is then fortified. Following fermentation, it undergoes aging in oak barrels of various sizes for a minimum of 24 months in Florio's cellars.
