WINE MAKING PROCESS
The Jean Fournier Marsannay Cuvée Saint-Urbain 2022 is produced using grapes that undergo manual harvesting and sorting. Fermentation is carried out with natural yeasts, with controlled temperatures during vatting for approximately 21 days, involving techniques like punching down and pumping over, followed by gentle pressing. The white wines are then aged for 12 months in demi-muids, utilizing 15% new wood, and subsequently spend 3 months in concrete tanks. The vineyard practices are certified organic, with ongoing exploration of biodynamic methods.
