WINE MAKING PROCESS
The Mas Amiel Maury Vintage Rouge 2020 is produced using traditional Vin Doux Naturel methods. Grapes are fermented in temperature-controlled vats at 25°C, with fermentation halted by fortification (mutage) midway. Maceration on skins lasts for 15-20 days. The wine undergoes 10 months of aging in topped-up tanks in a reductive environment before bottling. Viticulture is 100% biodynamic, with manual harvesting and double sorting of bunches.
