WINE MAKING PROCESS
The winemaking process for Mas de Libian Khayyâm involves 100% de-stemming and light crushing of the grapes. Fermentation takes place in temperature-regulated tanks with a maceration period of around 15-18 days. The wine is vinified without added sulfites or yeasts. Aging involves maturation for about nine months, with 50% of the wine resting in large, neutral oak foudres, while other portions may be aged in concrete tanks or ceramic eggs.
