WINE MAKING PROCESS
The production of Masi Angelorum Recioto della Valpolicella Classico begins with the selection of grapes from hillside vineyards. A key technique is the appassimento process, where harvested grapes are laid out on bamboo racks in drying lofts for three months during winter. This concentrates the sugars and flavors within the grapes. Following this drying period, the grapes are pressed and fermented. The wine then undergoes an aging process, spending one year in Slavonian oak followed by 25 months in small oak barrels. A final three months of bottle aging completes the maturation before release.
