WINE MAKING PROCESS
Massetino is produced through meticulous vineyard management and winemaking techniques. Each parcel is vinified separately, with fermentation initiated by indigenous yeasts in concrete vats, followed by an extended maceration period. Malolactic fermentation takes place in barriques, with 50% new oak. The wine ages for 12 months in barrels, then is blended and spends a further three months in concrete tanks or barrels before bottling. Hand-harvesting at optimal ripeness is a key step in the process.
