WINE MAKING PROCESS
Massimago Valpolicella DOC 2018 is crafted using a blend of Corvina, Corvinone, and Rondinella grapes. The winemaking process begins with hand-harvested grapes, followed by fermentation in stainless steel tanks to maintain fruit purity. A maceration period of around 10 days is employed, and the wine undergoes a second fermentation using Amarone grape skins, a technique known as Ripasso. Following this, the wine is aged for twelve months in small French oak barrels. The winery operates under a strict organic farming philosophy, prioritizing sustainability, biodiversity, and the use of renewable energy sources like solar power.
