WINE MAKING PROCESS
The winemaking process for Domaine Pouderoux 2022 begins with Grenache noir grapes harvested at high maturity from organically and biodynamically certified vineyards. Fermentation is halted early through 'mutage sur grain', where grape spirit is added to stop the yeast activity, fortifying the wine and preserving its sweetness. This is followed by a 30-day period of fermentation and skin maceration. The wine then undergoes aging for about six months in large concrete tanks, a technique that helps to retain its freshness and fruit purity. Some sources also mention aging in stainless steel tanks.
