WINE MAKING PROCESS
The winemaking process for Penfolds Max's Chardonnay involves fermenting fruit parcels in a mix of stainless steel and seasoned French oak. Partial malolactic fermentation and time spent on lees, with stirring (battonage), are utilized to develop mid-palate texture and creaminess while maintaining freshness. The wine is then aged for seven months in French oak barriques, with a small proportion of new oak and the balance in seasoned barrels.
