ABOUT THIS WINE
Maximus is a red wine from Nicolas Carmarans, a producer known for his natural winemaking approach in the Aveyron region of France. The wine is made exclusively from the Fer Servadou grape, a local variety. Carmarans' philosophy centers on purity and elegance, creating wines that are distinct from the more traditional styles of Aveyron. This particular wine is crafted using minimal intervention, resulting in a 'zero-zero' designation, meaning no sulfites are added, and the wine is neither fined nor filtered. The grapes are sourced from old vines grown on granitic soils at high elevation, contributing to the wine's unique character.

WINE MAKING PROCESS
Maximus is crafted by Nicolas Carmarans using a natural winemaking approach. The grapes are sourced from organically farmed vines aged 20-50 years, planted on granitic soils. The winemaking process begins with 16 days of whole-bunch carbonic maceration, a technique chosen to enhance freshness and fruit expression. After a gentle pressing, the wine is aged for 12 months in old barriques. True to his natural philosophy, Carmarans bottles the wine without any fining, filtration, or added sulfites, resulting in a pure and unadulterated expression of the Fer Servadou grape and its terroir.
