WINE MAKING PROCESS
The Mega Spileo Assyrtiko-Lagorthi is produced using a combination of techniques. Grapes undergo pre-fermentative extraction before fermentation, which occurs in new oak barrels. Lees stirring is employed for several months to enhance texture. Following barrel aging, the wine requires a minimum of two years of bottle aging to fully develop its character. For the 2020 vintage, organic farming practices were utilized, and grapes were hand-harvested.
