WINE MAKING PROCESS
Mega Spileo Mystic Brut is produced using the Charmat method, with the second fermentation taking place in a closed tank to develop its effervescence. The base wine is a blend of indigenous Greek grape varieties from multiple vintages, starting from 2020. Following secondary fermentation, the wine rests on its fine lees for a minimum of six months, with regular stirring to enhance texture and complexity. It then undergoes a further period of at least six months of bottle aging before release. The grapes are cultivated using organic principles in the mountainous vineyards of Aigialeia.
