ABOUT THIS WINE
The Merino Organic Red Wine from Casa Relvas is an organic red wine from Portugal's Alentejo region. The wine's name is inspired by the Merino sheep that graze the vineyards, contributing to the estate's sustainable viticulture. Casa Relvas, a family-owned winery founded in 1997, manages extensive vineyards, cork forests, and olive groves, emphasizing sustainable development. The Alentejo region's climate, characterized by dry springs and moderate summers, supports the slow ripening of grapes, contributing to the wine's complexity. The 2023 vintage experienced a dry spring and normal summer temperatures, fostering this slow ripening process.

WINE MAKING PROCESS
The winemaking process for Merino Organic Red Wine involves mechanical night harvesting followed by total destemming. A 48-hour maceration period precedes fermentation, which occurs in stainless steel vats at controlled temperatures (21-25°C). Malolactic fermentation takes place in stainless steel vats with oak staves. Ten percent of the wine is aged for six months in used 400-liter oak barrels.
