ABOUT THIS WINE
The Mezzek Cabernet Sauvignon & Mavrud is a red wine from Katarzyna Estate, located in the Thracian Valley of Bulgaria. This wine is part of the 'Mezzek' series, which aims to showcase the distinct qualities of different grape varietals. The estate's vineyards are situated near the village of Mezek, an area rich in ancient Thracian history, with the winery itself being a modern venture founded by Krzysztof Tryliński. The region's climate, a blend of continental and Mediterranean influences, supports the cultivation of grapes like Cabernet Sauvignon and the indigenous Mavrud, which are blended here to create a unique expression of the terroir.

WINE MAKING PROCESS
The winemaking process for Mezzek Cabernet Sauvignon & Mavrud begins with hand-harvested grapes that are cooled before sorting, destemming, and crushing. Alcoholic fermentation occurs in stainless steel tanks, followed by a cold maceration with skins and a post-fermentation maceration. The wine then undergoes malolactic fermentation in French oak barrels. A portion of the blend is aged in French oak for six months, contributing to its structure and complexity. The estate's philosophy emphasizes careful cellar management to allow the vineyard's character to shine through.
