WINE MAKING PROCESS
The winemaking process for Michele Chiarlo Fornaci Gavi begins with yield management, including thinning excess bunches during summer to leave 5-6 bunches per vine. Harvest is performed manually between September 18th and 22nd. Fermentation takes place at 17°C for three weeks, with a portion of the wine fermented in stainless steel tanks and another in small barrels. Following fermentation, the wine matures for about a year, aging on fine lees in both stainless steel tanks and small barrels. This aging process is followed by a further 12 months of refinement on the lees.
