ABOUT THIS WINE
Mirabrás is a white wine from Barbadillo, produced in the Vino de la Tierra de Cádiz appellation of Andalusia, Spain. The 2018 vintage is crafted from 100% Palomino Fino grapes. The wine's identity is deeply connected to ancient winemaking practices of the Sherry district, aiming to revive traditional techniques. It is characterized by its forceful and rare profile, with a depth that reflects biological aging, the influence of albariza soils, and old oak casks. The name 'Mirabrás' itself is linked to a style of Flamenco associated with Sanlúcar. Barbadillo, the producer, is a historic winery founded in 1821, renowned for its Manzanilla production and its significant role in Andalusian white wines, possessing extensive vineyards within the Sherry Triangle.

WINE MAKING PROCESS
Mirabrás is produced using traditional methods from the Sherry district. The Palomino Fino grapes are harvested from the 'Cerro de Leyes' vineyard, planted in 1972, on albariza soil. A key technique is 'asoleo,' where grapes are briefly sun-dried before fermentation. The wine is fermented in old Manzanilla casks using natural yeasts. Following fermentation, it is aged for approximately 14-18 months on fine lees, with some vintages also undergoing partial biological aging under a light layer of flor. This process aims to recover traditional production techniques and express the character of the terroir.
