WINE MAKING PROCESS
Alta Alella Mirgin Reserva 2020 is produced using the Traditional Method, with the base wines fermented separately in steel tanks. Following blending, a second fermentation takes place in the bottle, a process crucial for developing the wine's effervescence and characteristic complexity. The wine then ages on its lees for an extended period, typically between 20 and 42 months, before disgorgement. This extended aging contributes to its refined texture and aromatic depth. The grapes are manually harvested at optimal ripeness. Alta Alella is committed to certified organic farming and is recognized for its pioneering work in producing sulfur-free Cava.
