WINE MAKING PROCESS
The Molino Del Ciego Semillon 2021 is produced using 100% Semillon grapes from vines over 100 years old. The winemaking process involves manual harvesting and fermentation with native yeasts in concrete tanks or stainless steel. A significant technique employed is skin-contact fermentation for approximately one month, which contributes to the wine's structure. Following fermentation, the wine undergoes aging for five months in a combination of old barrels and stainless steel, or eleven months in large oak vats. Roberto Henriquez's approach is characterized by minimal intervention and a focus on organic farming practices.
