WINE MAKING PROCESS
The Blankbottle Moment of Silence is produced using grapes sourced from various vineyards in Wellington. Winemaking involves spontaneous fermentation with indigenous yeasts, with some skin contact employed. The wine is then aged for about eight months on its lees in a mix of concrete egg-shaped tanks, amphorae, and older French oak barrels. Grapes are harvested at optimal ripeness and cooled before processing. Blankbottle's approach emphasizes minimal intervention, allowing the natural character of the grapes and the terroir to shine through.
