WINE MAKING PROCESS
The Momento Massimo 2016 is produced through a meticulous winemaking process. Each grape variety is vinified separately using micro-fermentations and natural yeasts. Fermentation and maceration take place in open 10hl vessels with manual remontage. Following fermentation, the wine is aged for 24 months in French barriques and tonneaux. It then undergoes at least two years of bottle aging before release. Grapes are hand-harvested in small trays. Terreno's vineyards have been certified organic since 2014, and the estate operates with 100% self-sufficiency in energy, heat, and water.
