WINE MAKING PROCESS
The winemaking process for Mon Ross begins with organically farmed Barbera grapes, hand-harvested from the estate's vineyards in Loazzolo. Fermentation is traditionally conducted using native yeasts in wooden vats, which helps to preserve the grape's inherent fruit character. Following fermentation, the wine is aged for about four months in oak barrels. This brief period in oak allows for gentle maturation and integration of flavors without imparting heavy oak notes, ensuring the wine remains fresh and fruit-forward upon bottling.
