WINE MAKING PROCESS
The winemaking process for Monasterio de las Viñas Reserva begins with the careful, manual harvest of the different grape varieties. Each varietal is fermented separately in temperature-controlled stainless steel tanks, followed by a 15-20 day maceration period to extract color, flavor, and structure. The wine is then aged for 12 months in a combination of American and French oak barrels. Following barrel aging, it spends an additional 24 months maturing in the bottle before being released, allowing for the development of its complex character.
