WINE MAKING PROCESS
The Ver Sacrum Monastrell 2022 is produced using 100% Monastrell grapes from a single vineyard in Los Chacayes, Uco Valley. The winemaking process emphasizes minimal intervention. Grapes are hand-harvested and undergo a four-day semi-carbonic maceration, followed by spontaneous fermentation with native yeasts and whole clusters for approximately 20 days. The wine is then aged for six months on its lees in large concrete eggs (3,000 liters), with no new oak used. Some sources indicate an additional eight months of bottle aging.
