WINE MAKING PROCESS
The grapes are 100% hand-harvested early in the morning during the first week of October to preserve freshness. Upon arrival at the winery, they are destemmed and gently crushed. Fermentation and maceration take place in vertical, temperature-controlled stainless steel tanks for six days at 24°C, with frequent pump-overs to gently extract color and tannins. Following alcoholic fermentation, the wine undergoes full malolactic fermentation. It is then aged for six months in a combination of concrete and stainless steel tanks, completely avoiding oak contact to preserve primary fruit purity, followed by three months of bottle aging before release.
