WINE MAKING PROCESS
Monte Carbonare Soave Classico DOC is crafted using 100% Garganega grapes from organically farmed vines. The harvest is manual, typically in early October. Fermentation occurs in stainless steel tanks at controlled temperatures (14-16°C) for 16 days, with malolactic fermentation deliberately avoided to maintain freshness. The wine then ages for 12 months in stainless steel on its fine lees, followed by a further 6 months of bottle refinement before release. This meticulous process emphasizes purity, minerality, and the distinct volcanic character of the vineyard.
