WINE MAKING PROCESS
The Monte Carbonare Soave Classico DOC is produced from 100% Garganega grapes. After manual harvest in early October, the grapes undergo alcoholic fermentation in stainless steel tanks at controlled temperatures (14-16 °C) for 16 days, with malolactic fermentation avoided to maintain freshness. The wine then ages for 12 months in stainless steel tanks on its fine lees, followed by a further 6 months of bottle aging before release. This process emphasizes preserving the wine's inherent minerality and vibrant acidity derived from its volcanic vineyard origin.
